Sugar Free Carrot Muffins

Sugar free carrot muffins are packed with nuts and fruit and make the ideal snack for hungry people on the move. A combination of a sugar substitute and crushed pineapple adds enough sweetness to the final product.

Unlike many of the recipes we have supplied, this one contains vegetable oil instead of shortening (butter). You can use virtually any vegetable oil, but avoid olive oil because its taste is too distinctive and this will spoil the subtle fruity flavour.

This recipe requires you to heat the oven to a higher temperature than usual, but you will lower the temperature as soon as the sugar free muffins go into the oven. You will need to place the pan higher than usual, and cook for a shorter period, otherwise they might burn.

Sugar Free Carrot Muffins Ingredients

• 1½ (525 ml) cups all purpose flour
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• ½ tablespoon ground cinnamon
• ½ teaspoon ground ginger
• ½ teaspoon ground nutmeg
• ½ cup (175 ml) Xylitol or another sugar substitute
• ¼ teaspoon salt
• 3 large eggs
• ½ cup sunflower or canola oil
• 1 teaspoon vanilla essence
• 1½ cups (525 ml) finely grated carrots
• 1 cup (350 ml) chopped walnuts
• ¾ cup (262.5 ml) crushed unsweetened pineapple

Method

Preheat your oven to 220 °C and grease a 12-cup muffin pan.

Sift the flour, baking powder, baking soda, salt and spices into a large mixing bowl. Break the eggs into a second bowl and mix in the oil, vanilla essence (or extract) and the sugar. Stir briskly until the mixture is smooth and then add the nuts and fruit. Add the fruit and egg mixture to the flour and stir gently until everything is well combined.

Spoon the batter into the well-greased muffin pan, so that there is an equal amount in each cup. Place the pan just above the middle of the oven and immediately turn the temperature down to 190 °C. Bake for 15 to 18 minutes. After 15 minutes, test to see if the muffins are cooked. You can do this by pricking a toothpick into the centre of one of them. It should not be moist inside. Let the pan cool down and then remove and enjoy eating your delicious sugar free carrot muffins.
