Sugar Free Banana Muffins
Sugar free banana muffins are easy to make and absolutely delicious. Beaten egg whites counter the heaviness of the banana without changing the distinctive taste of banana.
Bananas contain three natural sugars: sucrose, fructose and glucose, as well as various vitamins - specifically Vitamin C and B6 - and minerals, including potassium. They also contain a large quantity of digestible carbohydrates which the body is able to burn off very easily and quickly.
However, unlike berries, bananas have a relatively high GL count. If you are on a low GL (Glycemic Load) diet - where you measure the intake of GL in the food that you eat - you can have a punnet of berries (blackberries, blueberries, raspberries or strawberries, or a combination of these) and you will only have consumed 5 GLs. The GL count of just half a small banana is also 5 GL. Nevertheless bananas are still a healthy food.
Sugar Free Banana Muffins Ingredients
• 1¾ cups all purpose flour
• 2 teaspoons baking powder
• ¼ teaspoon baking soda
• 5 tablespoons Xylitol or 8 packets Equal sweetener
• ¾ teaspoon salt
• 3 tablespoons vegetable oil
• 2 egg whites beaten until frothy
• 1 cup banana, mashed
• 1 teaspoon vanilla essence
You will need to preheat your oven to 200 °C. Also grease your muffin pan with a little bit of butter. The ingredients specified are sufficient to fill a 12-cup muffin pan.
Sift the flour, baking powder, baking soda and salt into a mixing bowl. In another bowl combine the oil, beaten egg whites, sweetener, mashed banana and vanilla essence and mix well. Pour the dry ingredients into the banana mixture and blend together well.
Spoon the sugar free batter into the muffin pan and place in the centre of your, by now moderately hot oven. Leave to bake for about 20 minutes. Before you remove them, test that they are done by sticking a skewer or toothpick into one of the sugar free muffins. It should come out clean.
Remove the pan from the oven and leave to cool for about 10 to 15 minutes before serving with butter. Even if you don't serve with butter you will be sure to find that these are really delicious sugar free banana muffins.
