Sugar And Milk Free Bran Muffins

Sugar free, milk free bran muffins are ideal for anyone who has a milk intolerance or people who are on a diet. These sugar free muffins are made with any type of bran flake cereal, for example Kelloggs All Bran Flakes. While the recipe calls for a liquid sweetener, you could substitute granular Xylitol if you prefer. By all means experiment with different types of sweetener to find the taste that appeals most to you.

There is no baking powder or baking soda in this recipe so it is vital that you use a good quality self-raising flour. If you don't the muffins won't rise. You must also use an electric mixer to make the batter. This aerates the mix and makes it more light and fluffy than it would be if you just stirred the mix with a spoon.

Sugar and Milk free Bran Muffins Ingredients

• 2 cups self-raising flour
• 2 cups bran flakes
• 2 extra large eggs
• 1 tablespoon liquid sweetener (artificial or Stevia)
• 340 ml can of Diet 7-Up or Sprite Zero

Method

Preheat your oven to 200 °C to ensure that it will ready when you have finished mixing the ingredients for your muffin batter. Grease a 12-cup muffin pan with a little bit of butter, or use cup cake paper liners in the pan.

Sieve the flour into a large mixing bowl and set on one side. Break the eggs into a second bowl and add the bran flakes, cool drink and liquid sweetener. Now use an electric mixer on medium speed to combine the ingredients thoroughly. Remove the beaters and scrape all the batter that has stuck to them into the bowl.

Stir the flour into the mixed ingredients so that it becomes completely dissolved and mixed in to the batter.

Spoon equal amounts of your bran batter mix into each section of the muffin pan. Pop the sugar free muffins into the oven and cook for about 20 minutes. Check to make sure they are ready, by either poking a skewer or a toothpick into one of them. If it comes out clean they are ready. If not let them cook for another couple of minutes.

Remove the pan from the oven and leave to cool for 10 to 15 minutes. Carefully remove the muffins from the pan. If you used liners, let the muffins cool for another 15 minutes before removing them. Then you can enjoy your sugar free, milk free bran muffins.
