Colourful Kids Birthday Cakes
For something completely different kids birthday cakes may be coloured to create a rainbow impression. All you need for this is different shades of food colouring. Of course you could also flavour the cake batter as well.
You can make a rainbow cake with any type of batter, but it works particularly well with this delicious boiled milk sponge cake which must be the quickest and easiest type of cake to bake. It really is impossible to flop.
For something completely different you can decorate the cake with edible rice paper and jelly piping.
Colourful Kids Birthday Cakes Ingredients
• 4 tablespoons of butter
• ½ cup milk
• 4 eggs
• 375 g sugar
• 250 g cake flour
• 4 teaspoons baking powder
• ½ teaspoon salt
• 3 different food colourings
• butter icing
Turn your oven on to 180 °C so that it can heat up while you mix the batter for your rainbow birthday cake. You will need two round cake tins that are about 230 mm in diameter. Grease them lightly with butter on the bottoms and sides.
Sift all the dry ingredients into a large mixing bowl. Melt the butter over the stove and then add the milk. Bring to the boil, but be careful not to allow it to start bubbling over. In a separate bowl mix the eggs and sugar together so that the sugar dissolves. Then fold the eggs and sugar into the dry ingredients. Add the hot milk and butter little by little stirring gently. Don't beat the batter.
Divide the batter into three and add a few drop of different colouring to each.
Pour the mixture into the tins so that there is a mix of colours in each. Bake in the preheated oven for about 20 minutes.
Remove the cakes from the oven and allow to cool. Sandwich the two cakes together with butter icing and then spread icing over both of them. Cut rice paper so that it will fit onto the top of the cake. Trace or draw a picture on the rice paper and then trace over the outline with jelly piping. If you wish use a little food colouring to colour in the picture. You could also write "happy birthday" and the child's name on the rice paper which is a favourite way of decorating kids birthday cakes.
