Sugar Free English Muffins without Honey

English-style muffins may be made with or without honey, depending largely on how sweet you want them to be. Traditionally many recipes for these muffins, which are often called crumpets and sometimes drop scones, contain golden syrup. But of course this will not result in sugar free English muffins!

This particular recipe does not contain any honey, but it requires more sweetening than most other recipes of this type. You can use Xylitol, which is available in fine granules, or Stevia powder.

You will need a large, flat, checkout, Home Improvement Tools preferably non-stick frying pan to cook these sugar free muffins, rather than muffin pans. This is because instead of being cooked in the oven, they are cooked on top of the stove.

Ingredients
• 4 tablespoons all-purpose, self raising flour
• 2 teaspoons of baking powder
• pinch of salt
• 2½ tablespoons granulated Xylitol or Stevia powder
• 2 large eggs
• 2 tablespoon of milk
• 1 tablespoon of melted butter

Method
If you don't have a non-stick frying pan you will need to grease the surface of your pan slightly to prevent the muffins from sticking.

To prepare the batter, sieve and mix the flour, sweetener and salt together. Break the eggs into these dry ingredients and add the milk.
