Sugar free Blueberry Muffins

Try making this delicious muffin recipe when fresh blueberries are available. You can also try using frozen blueberries, although their texture changes consider, Alomancy once they have been frozen, and they tend to be softer and more watery - which means that the cooked muffins will be more moist than usual.

Blueberries are not the sweetest berries around, but they are a favourite ingredient for muffins. You can eat sugar free blueberry muffins on their own or cut them in half and spread with a little softened butter.

Sugar free Blueberry Muffins Ingredients:

• 2 cups self raising flour
• 2 teaspoons of baking powder
• 1 tablespoon of Xylitol
• ½ teaspoon salt
• 2 large eggs
• 1 cup of milk
• 4 tablespoons butter
• 1 teaspoon vanilla essence
• 1 cup blueberries

Method
