Soft Fruit Cheesecake

Ingredients
50 g butter
140 g castor sugar
50 g walnuts
100 g digestive biscuits
225 g full fat soft cream cheese
2 large eggs
150 ml plain yogurt
15 g gelatine powder
4 tablespoons warm water

Method
Even though you won't be cooking this cheesecake, you will still need a 20 to 22 cm cake tin to make it. It should have a removable base so that you can slide the cake out when it has set. Grease the base and sides and then mix the ingredients together.

Start by making the base for the cheesecake. You do this by melting the butter and then stirring in the sugar together with the walnuts which need to be finely chopped. Then stir in the biscuits which should be finely crushed. Press this mixture into the greased tin and set on one side.
